3 Bean Salad

INGREDIENTS:

1 large red pepper, diced

1 large yellow pepper, diced

1 large orange pepper, diced

1 medium red onion, diced

1 can black beans, drained

1 can black-eyed peas, drained

1 can pinto beans, drained

1 small package frozen yellow corn, thawed

DRESSING:

3 1/2 tablespoons coconut sugar

3/4 cup apple cider vinegar

1/2 cup avocado oil

1 teaspoon water

2 teaspoons salt

1 teaspoon pepper

DIRECTIONS:

First rinse the beans and dice the onion and peppers. In a large bowl, combine all the vegetables and beans. In a sauce pan, heat the dressing and bring to a boil. Remove from heat and let cool then pour over the bean mixture and toss to combine.
