Pesto Crusted Fish
INGREDIENTS:
Pesto:
3 cups fresh basil leaves
1 cup olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1-2 garlic cloves
1/4 cup pine nuts
2 tablespoons Pecorino
Romano cheese, grated
2 tablespoons Parmesan
cheese, grated
This pesto recipe can also be used on pasta!
Fish:
2 pounds boneless, skinless salmon filets
½ Cup Pecorino Romano
½ Cup Italian breadcrumbs
1 ½ tablespoons Italian seasoning
¼ Cup avocado oil
Directions:
Pesto:
Add all the ingredients into a food processor and blend on high until desired consistency is reached.
Fish:
First, wash your salmon filets and pat them dry. Then sprinkle the salmon filets with Italian seasoning. Next, Brush the pesto onto both sides of the fish. Mix the parmesan and breadcrumbs, then pat the mixture onto both sides of all the salmon filets. Add the oil to a cast iron skillet and cook the fish for 3 minutes per side at medium-high heat. Top the fish with the remaining pesto. Buon Appetito!
