Citrus Olive Oil Cake

Ingredients:

1 1/3 Cups extra-virgin olive oil

3 eggs

1 1/4 cups whole milk

1 lemon zested

1 orange zested

1/8 cup orange juice

1/8 cup lemon juice

1/4 cup orange curacao (liquor)

1 1/2 teaspoons lemon extract

1 teaspoon almond extract

1 teaspoon vanilla extract

1 3/4 cups granulated sugar

2 cups + 2 tablespoons all-purpose flour

1 1/2 teaspoons kosher salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda

Powdered Sugar for dusting

Directions:

Preheat oven to 325º F

Line the base of a 13x9in pan with parchment paper

In a large bowl combine the olive oil, eggs, and whisk to emulsify

Then add in the zest, orange + lemon juice, orange curacao, milk, and the lemon, almond, and vanilla extract.

Add the sugar and mix.

In another bowl combine the flour, salt, baking soda, and baking powder and whisk to incorporate.

Add the dry mixture into the wet ingredients and whisk to combine.

Do not over mix but the batter should be on the thin side.

Pour the batter into the parchment want to come over lined pan.

Bake for 65-70 minutes or until a tooth pick comes out clean from the center of the pan.

Wait at least an hour to remove the cake from the pan and dust the top with powdered sugar.
